Here is what I ate all day:
Breakfast:
GF/CF Organic Bacon by Applewood Farms
half an avocado
Dairy free shake by Standard Process mixed into Coconut Milk with a banana, peach, and ground flax seeds.
Lunch:
Avocado and tuna with spices (recipe is in the "Everyday Paleo" book)
Snack:
cut up apples, plums, and sunflower seeds
baby carrots with guacamole (the individual packs of Wholly Guacamole)
Dinner:
Meatloaf that J made at her dinner party. Filled with coconut flour (to absorb moisture from the veggies), shredded zucchini and carrots, sea salt, fresh ground black pepper, and garlic.
Cauliflower "rice" that J made at her dinner party. You just grate up fresh cauliflower using your food processor then put it in a frying pan to tenderize it a little. Pull the pan off the fire and then mix in Extra Virgin Olive Oil, Sea Salt and pepper to taste. For my kids and hubby I made some with Organic butter instead of the Olive Oil. This literally took 10 minutes to make. Then you just put the cooked meatloaf right on top of the Cauliflower and let the juice from meatloaf sink in. So yummy!
Snack:
another SP Complete Dairy free shake with banana in it.
